Rich and I are SLOWLY moving towards healthier eating. We love no-bake cookies. These are a healthier option.We don't like as much flax seed as what the recipe calls for. I add some extra oatmeal and coconut flakes to compensate.
1 cup dry oatmeal
1/3 cup coconut flakes
1/2 cup nut butter (combination of peanut butter, almond butter, nutella, etc.)
1/3 cup honey
1/2 cup ground flax seed
1 tsp vanilla
Combine all ingredients. I put it in the microwave for 25 seconds to make it easier to combine. Mix well. Cover and refrigerate for 1 hour. Shape into 1 1/2 inch balls.
Makes 24 balls.

Skinny Chunky Monkey Cookies!!!
3 ripe bananas
2 cups oats
1/4 c peanut butter
1/4 c cocoa
1/3 c unsweetened applesauce
1 tsp vanilla
Heat oven to 350. Mash banana and mix with the rest of the ingredients. Stir and let sit for 20 min. Drop by spoonfuls and bake 10-12 min.
Makes approximately 30 cookies

Easy Peanut Butter Cookies
2 c peanut butter
2 c white sugar
2 eggs, beaten
2 tsp vanilla
Combine all ingredients, shape tablespoon fulls into balls. Place 2 inches apart on ungreased baking sheets, flatten with a fork. Bake at 350 degrees for 16-18 minutes. Cool for 5 minutes then put on wire cooling racks
We forgot the vanilla and they still taste yummy.
We used the meat tenderizer for a special design.

Strawberry Lemonade Cookies
Summer is a time for fruity desserts. I thought I'd make a new cookie. I've been seeing
strawberry lemonade cookie mixes and cookies all over. I knew I could
make them with cake mixes.
1 box strawberry cake mix
1 box lemon cake mix
2 eggs
1/2 c. oil
1/2 c. water
powdered sugar
Mix all ingredients together in a large bowl. Dough will be stiff. Place in refrigerator for about 10 to 15 minutes. Preheat oven to 350 degrees. Take dough out of fridge once chilled. Roll into 1 inch balls. Roll in powdered sugar to coat. 15 cookies fit in one jelly roll pan. Bake for 12 minutes. Cool on pan for 10 minutes before removing to cooling racks.
I made 55 cookies with this recipe. I plan on sandwiching cream cheese frosting between a few of the cookies to make them extra yummy! Enjoy!
