Vegetable Juice is one of my favorite drinks for road trips. It keeps me full and is delicious. I do worry about the high sodium content. Here's a healthier option to make at home.
4 carrots
3 tomatoes
2 celery stalks
1/4 medium onion, peeled
1/2 fresh beet
1 clove garlic
1/2 bunch spinach
Parsley to taste
Put tomatoes in juicer first. Juice remaining ingredients. Mix well. Serve immediately.
